I just finished my very favorite breakfast and I thought you all should know about it.
Breakfast is big news, people.
For real though, breakfast is big news! You know how your mama always told you that breakfast was the most important meal of the day? Your mama’s smart! Studies show that eating a healthy breakfast (aka, not doughnuts!) can help you increase your vitamin and mineral intake, improve your concentration, increase energy levels, lower cholesterol, and most importantly: people who eat breakfast tend to weigh less than people who skip breakfast. I do yoga on pretty much a daily basis and some days I try to do yoga before I eat breakfast. Let me tell you- those are bad days. Those are the days that I do downward facing dog and everything goes black and spinny. If I eat breakfast about an hour before yoga though? I do great.
So eat your breakfast, people!
Eggs. I love eggs, particularly fried eggs. I always fry them in nonstick spray, you know, saving calories and all. An egg fried in nonstick spray has around 75 calories, 5 grams of fat, and 6.3 grams of protein.
Toast! Mmm. I love rye toast. I use just one since it’s wide and cut it in half. One slice has 90 calories, 1 gram of fat, and 4 grams of protein. Sometimes I use 2 slices of a lower-calorie bread, but I am out right now!
I can’t even tell you how much I love Laughing Cow light cheese. I spread it on sandwiches, eat it plain, dip crackers in it… it’s just creamy and delicious. My favorite flavor is French Onion. One wedge has 35 calories, 2 grams of fat, and 2.5 grams of protein.
If you’ve ever tried it, you know. If you haven’t tried it, look for it. SO GOOD. I use Cholula on everything.
Now, I love all those things separately but when you put them together you get this wonderful, filling breakfast sandwich. And it’s so easy to make! Toast your bread and fry your egg. Spread both pieces (or halves) of bread with the cheese. Slide the egg on. Splash with Cholula. Top with other piece of bread. And there you have it! A quick, easy, healthy breakfast. It’s a total of about 200 calories, 8 grams of fat, and 12 grams of protein- a perfect start for your day.
It’s key day! My realtor should be calling me later to come pick it up.

I think I will start painting today. Expect many, many pictures in the coming two weeks. The only room in the house that isn’t white is the master bathroom and it’s school-bus-yellow… so we have lots and lots of painting to do.

Keegan has picked up lots of words lately, he is the cutest human on the planet. I need to get some videos of him talking. It just makes me want to pick him up and squeeze him. Especially when he says “Appah…….. JOOS!” (apple juice) with the big old pause in the middle and a huge proud grin afterward.
Hailey is upset that we are moving out of this house. All day, every day, she follows me around asking “are we taking ________ with us to the new house?” She doesn’t understand the concept that we are taking everything. “Even my bed? And my clothes? And the table? And the TV?” We moved into this place when she was just two-and-a-half so I guess she doesn’t remember that. Lately, when she’s mad at Keegan, she calls him ‘your baby’. As in “Mom, your baby just bit me!” Also, she has been starting sentences with “Apparently…” I don’t think she knows what it means, and she actually pronounces it “attarently”. She cracks me up.
And last, one of my new favorite things…. Yeah, coffee. I have always loved coffee, but it’s been taken to a whole new level. I usually buy different coffee every time I go to the store. Last time, though, I got this Wolfgang Puck ‘Vienna private reserve’ coffee and I’m never getting anything else ever again. It is DELICIOUS.
I was looking to buy it in a larger quantity online though and all I can find is Keurig pods. I wish I had a Keurig! My in-laws have one and it is so cool! Maybe one of these days. (If you don’t know what a Keurig is, you should really check that link out.) Till then… I got a bag of pre-ground WP Vienna at Wal-Mart, of all places. Maybe I should just go buy all they have on the shelf!
And then take that and mix it with Coconut Creme Coffee Mate…. oh my. Ooooh my. This combo turned me from a one-up-a-day girl to a two-cup-a-day girl. My heart goes out to you, Wolfgang Puck! No, seriously, I think it just leaped out of my chest. Maybe I should eat something.
Hello! I have not left the planet, but close. I have been in Elko. We were there Wednesday through Sunday for the Mine Safety Competition. “What’s that?” Mines have teams who are trained to rescue people in the event of an accident at the mine site- a collapse, a fire, etc. The competition is something put on every year where teams from all over the place- we even had a team from Alaska compete this year- come together to test their skills and have some fun. There are stations set up and the teams have to do things like a confined space rescue, some rope work, firefighting, etc. They are judged on how they do. They also have a big scenario the following day where an accident is staged and each team has 35 minutes to rescue as many patients as they can.
Usually we get to follow Tim’s team around and watch them do each station. This year, though, Newmont hosted, so Tim got to be a judge for one of the stations- the confined space. Not nearly as much fun as following him around and staring at him the whole day… haha! Also, that means that Tim’s team couldn’t win anything. That’s part of the fun, seeing how they did at the banquet dinner at the end. But the kids did get to swim at the hotel pool every day and they loved that, and they got to play with the kids of other team members- which they also loved.
And while we were gone, Hailey turned four!
I have got a thousand things to do… we get the keys to our house one week from today. I need to unpack our suitcases from the trip and clean and then start packing boxes and call a million places and and and…. and I’m procrastinating. I have a few pictures of my kids that I will upload another time when there’s less to do.
 So I’ll leave you now with one thing I love: Brown Cow yogurt.

I especially like the chocolate cream-top… but since I’m always dieting, I usually only get to have a bite of two of this when Hailey and Keegan are eating it. The low-fat yogurt is delicious too though. I ate endless amounts of this when I was pregnant with Hailey. Yummy!
I am going to start doing this once a week- a quick list of my favorite things of the week or the month or the year or… just some of my favorite things ever. Because I know you want to be just like me, don’t lie. (snort!) Srsly though, I always love when people do these because I am a really freakin’ nosy copycat. ♥
Aquolina Pink Sugar perfume.It just smells good. It’s sweet but not annoying. I love it. I would really like to try the body lotion. And the body mousse. And the body scrub. Um, and the spritzer and the shower gel and the shower mousse and the roll-on perfume and and and…..

Cherries. Definitely in my top three favorite fruits. I’ve been eating so many of them! My dad’s cousin- the one that just got married- has a cherry tree in her back yard that is producing like mad. We picked a ton of cherries off of it a couple days ago and the branches are still just weighed down with fruit. Cannot wait to make some pies!
I am on the second book of the series, Dragonfly in Amber. I just can’t put it down- which makes my updating here even more sporadic. You really should pick them up if you see them. I found the first two at my public library. Adventure, romance, and even a touch of sci-fi…. just a good read.
