Making time to be fit

I am so stuck at this plateau right now, it is driving me nuts. I am about ten pounds where I would ultimately like to be. Ten pounds isn’t much but at the same time, that last ten pounds is the hardest! I was planning to do p90x again but have decided to put that off for a bit. Instead, I’m back to my old standby: walking. You might know by now how I feel about walking- I love it. Especially when I can go for a walk outside, which I get to do three days a week. The other days, I’m walking on my treadmill while reading my Kindle which is almost as good. But still, I have been stuck at this plateau for a few weeks now and it is making me insane!

A lot of my trouble with it right now is just being too busy. School is quite literally taking up all of my time. I spend at least four hours a day between schoolwork and studying (quite often it’s more), and a total of six hours a week in my one in-person class (anatomy & physiology). I still have to fit in time with my family, cleaning, laundry, shopping… and cooking. Which is where I am falling short. And herein lies the issue.

So my typical day starts at 6:30. I’ve got to get the kids up, fed, and ready for school. I take them to school, then take my hour-long walk. After I’ve done that, gotten ready, maybe made a trip to the grocery store, cleaned a few things, put in a load of laundry, done some homework, sat in class for three hours (if it’s Monday or Wednesday), then picked up the kids and we roll into the driveway at 4:45… the last thing I want to do is cook a meal!

I really need to work on this. Less eating out would be excellent on the budget AND the waistline. I’ve just got to plan better. I know I can shed this last ten pounds, and with walking for an hour every day it really shouldn’t take long as long as I can stay away from that damn general’s chicken!

The day I almost died, twice. Also: I’m back!

I’m back from Wyoming. I survived! But only barely…

Tim had a mine rescue competition for work there, and his team did fairly well- fifth place out of twelve. We spent the week in Gillette. It was sort of a boring week for me and the kids because Tim had to work a lot of it, but the hotel had a really nice pool so we swam quite a bit and I read two whole books on my kindle (LOVE IT!). Oh and we had a free day on Wednesday.

So, guess where we went?

I’ve always wanted to see it. Unfortunately, I think I was having a caffeine crash while we were there. I drank about 3 million ounces of coffee and energy drinks that morning because I was super tired, and then once we got to Rushmore, I started shaking and sweating and feeling dizzy/faint.

Like, seriously, I was sweating. It was unladylike.

I don’t even think it was 80 degrees out and yet the front and back of my shirt were wet. There was sweat dripping off of me onto the ground! Yeah, I’ll just shut up now before I make you all barf…. but it was really gross. And uncomfortable. I was pretty sure I was going to pass out for a while there. I think Tim even asked me if I was having a heart attack. I must have looked spectacular.

AND THEN the kids… omg. They are just too little to appreciate things like this apparently. THE. WHOLE. TIME, from the moment we got out of the car, all we heard was “I wanna go back to the hotel and go swiiiiiiiimmmiiiinnnggg” and “I don’t wanna be here!”

Let me tell you: the whining was not helping my caffeine crash mood at all. I believe at one point I threatened to put a ‘free to a good home’ sign around their necks and set them loose into a crowd of tourists.

And then after we left Mt. Rushmore, we went to Deadwood, SD (where Wild Bill Hickok was killed) which was pretty and old-west-y (what? It’s probably a word) but very touristy and would have been really fun if some dude in a van hadn’t almost run over me.

Seriously, you guys. I can’t even make this stuff up.

So basically, it was the worst day ever. But Mount Rushmore was really cool. Oh, and then we took a wrong turn leaving Deadwood and found a winery that had a free tasting, so that practically made up for my almost becoming roadkill.

Who is this stranger in my kitchen?

I’ve been off my game in the kitchen lately.  It’s as if my mind is not present.  I’ve been forgetting ingredients and unintentionally skipping steps, etc.  A couple days ago, all during one meal prep, I: burned my hand, dropped a bowl on my foot, spilled pasta on the floor, cut my fingers with BOTH a grater and a knife (nothing serious, no stitches), forgot to add the onions, and burned dinner.  I wish I was making this up.

And then I cried.  And Tim scraped off the burnt part and ate it anyway because there was nothing else he’s nice.

I have got to get it back together or my family is going to either starve or get food poisoning.  Maybe I should ease myself back in with sure bets like meatloaf and spaghetti sauce, build my confidence before I crack open my new Jamie’s Kitchen cookbook.  There are some things in there that I cannot wait to try, like polenta-encrusted fried chicken with sweet corn mash, fried bananas, and green tomato relish and Moroccan lamb stew. (Pardon me for a moment, I’m drooling… ok back) I’m just afraid if I hop right in, I’m going to lose a hand or burn down the house.

Shake it off, Rachel.  Shake it off.

Edited to add: Just after I posted this, I went to my e-mail and there was a recipe for “Spam Swiss Pie” in an ad in the sidebar.  I don’t think I’m quite that desperate.

Yet.

Dur.

I bought some dress patterns for Hailey and just ordered some fabrics. I thought this would be a cheaper alternative to buying her dresses this summer. Um. Well, maybe it would have been if our stupid Wal-Mart carried any fabrics I liked! I just spent $60 online on enough fabric for 3 dresses. Not counting the cost of the patterns b/c obviously I can use those again. I guess I will be stopping in Joann’s next time I am in Reno and hitting the clearance racks!
