Twitchy Stress-Ball

This last few weeks… the last month, really… has just been a whirlwind. I am barely keeping my head above water, stress-wise. I’ve got school- I’m taking three classes and am so swamped with homework and reading and studying that I can barely see straight. I’m taking three rather difficult classes and I’m doing well, but not without effort.

I’m also on the committee for Relay for Life, as you may remember from a post in January. (Go donate!) So I’ve got Relay commitments, which I love. And more commitments to come as it gets closer to the event- I’m both sponsorship chair and I am a team captain, so I have a lot of sponsorship asks as well as team fundraisers to do. I am so excited about Relay! I have a notebook I’m filling with ideas and I can’t wait to get going more on that.

I’m also training for a 5k. I’m using the couch to 5k program. I used to be a runner and then I stopped for a really long time. The couch to 5k program is awesome because it really eases you into running. I am six weeks into the program… well, I WAS six weeks in…

…and then the stomach flu attacked our house. It got us all. I haven’t run in a week now- between taking care of the kids and then being sick myself, it’s been a very hectic week. I’ll get back into the running again soon but I’m probably going to have to go back a week. We’ll see.

And of course, there’s everything else in life- kids, husband, house, cooking, cleaning… just trying to keep up.

Oh, and yesterday when Keegan had I the stomach virus? My washing machine broke. Yeah, that happened. Early in the morning of a day of vomit-spattered laundry. (Sorry… gross but true.)

While I am glad to be busy and feel like I have a purpose, I’m having a few stress-related health issues. Or at least I assume they’re stress-related. I’ve had an eye twitch for well over a month now, I think I have an ulcer and I started grinding my teeth so badly during the night that I had to go have a night guard made by my dentist.

Oy.

I’ll be ok. I didn’t intend this post to be complain-y, but it seems to be coming out that way.

I am happier and feeling more fulfilled than I have in a long, long time. I love everything that I have going on. I love Relay, obviously because it’s a great cause but also, it is a lot of fun! I’m having a blast making new friendships and working with them to raise money. School, of course, is for good reason- my future career. The 5k- I feel great when I run. It’s actually been my biggest stress reliever. When I run, I can just space out and I don’t have to think about anything at all- not which heart valve does what, or what kid must be taken where, or what company I’m going to ask for sponsorship. I can just be.

I am still working on balance. Finding time to get everything done, not pressuring myself beyond what I can bear, and making time for me. I think I’m getting better at it. In the meantime, this blog is falling by the wayside. Again. I’m sure you guys understand. I have to at least make an effort though, so I don’t feel like a total poser when I go to BlogHer this year. (Yes! I am totally going!!)

So instead of doing homework like I should be right now? I am taking it easy for a minute while I wait for the new washer to be delivered. I’ll do homework later. Probably. After I catch up on laundry. Maybe.

I’m good at procrastination, by the way, if anyone needs some tips.

When asked if I’d be interested in doing a review on PackIts, I jumped at the chance. I keep seeing their commercial on TV and thinking to myself “how cool!” I can’t tell you how many times I have been packing my kids’ lunches and trying to figure out how to fit a big old ice pack in along with the sandwich box, the juice box, the snack, the fruit.. ugh! So frustrating! On top of that, my kids kept on throwing their ice packs out by mistake.

Well, no more of that! PackIts fold up nice and compact and go right in the freezer. They’ve got gel packs built into the sides and will keep food cool for up to 10 hours, unlike those darn ice packs I was using that are warm by the end of the day- if they are even still around til then!

If your kids are anything like my four year old, a warm lunch bag by the end of the day meant a wasted half a sandwich. He never finishes it all! Now, he can eat the remainder of his sandwich as an after-school snack because it’s still cold and fresh.

I let my kids pick their prints. Hailey chose Gidget and Keegan chose Robots. It took them forever to decide which prints they wanted- there are so many to choose from and they’re all so pretty! Look how vibrant the colors are- so cool! They fold up so small and take up very little room in the freezer.

They are plenty big enough for my kids’ lunches which included a sandwich, a juice, a pack of cookies, and fruit.

PackIt also offers many other sizes of coolers. They have a picnic cooler with enough room for food for a family of four, they’ve got shopping bag coolers so you can get your groceries home nice and cold. They’ve also got a mini cooler and my personal favorite: wine cooler bags big enough to accommodate one or two bottles of wine.

This is going to be perfect to take a chilled bottle of wine to the lake this summer. Plus, that print? LOVE.

This is the mini cooler, which I thought was going to be awesome to take a water and a yogurt with me to my one in-person class, which is a three-hour long lecture. But alas, I haven’t been able to make use of this mini cooler. Why, you ask? Because, despite its pink prettiness, my husband has absconded with it. It is exactly the right size for his sandwich for work. He had been putting his sandwich (or other miscellaneous cold food) in a much larger cooler with an ice pack, which was taking up most of the room in his backpack. He works 12 hour shifts with an hour commute either way, so he basically needs to take a full day’s worth of food. This mini cooler works perfect for him. What I need to do is order him a more manly one (the black plaid is cool!) so I can take this one back.

We really love our PackIts. We’ve been using them for a couple of weeks now and I am impressed with the durability. They wipe down easily with a damp cloth, so they always look new and clean. Plus, they’re so cute- I especially love the Robot one. It’s gotten many compliments! If you have small children, the mini cooler is an excellent idea for keeping bottles cool, or storing healthy snacks to eat on the go- yogurts, cheese, cut veggies- much healthier alternatives to the mom-purse staple of crackers or cookies!

No More Nasty Eggs (Or how to properly boil an egg)

I didn't think to take a picture til I was partway through visciously devouring it. I'd have taken more delicate bites otherwise. Maybe. Hey, it was good and I was hungry!

You love ‘em or you hate ‘em: hard boiled eggs. I love ‘em. BUT I only love them when they’re made properly. I detest when the yolk is dry, powdery, and has a weird green ring around it. The green ring part is especially important if you’re making deviled eggs (which I hate, by the way… I don’t know why. I love eggs every way but deviled. It just doesn’t make sense!)

There is a way to avoid nasty eggs and it’s easy.

So, I bring you……

How to make a hard-boiled egg that isn’t nasty:

Do not use fresh eggs. They’ll be really hard to peel. Use eggs that are at least five days old.

Place eggs in pan. Cover by at least an inch with water. Add a generous pinch of salt- this is supposed to help prevent cracking.

Place over high heat. Bring to a boil. Boil for one minute. Cover pan. Remove from heat. Let sit covered for 12 minutes (15 minutes if you are cooking more than 6 eggs.)

Drain water, add cold water to pan and drain it off several times til they’re cool.

For ease of peeling, gently tap all over egg surface on the counter and start at the bottom of the egg- the wider end- there’s an air pocket there that’s a great place to start a clean peel.
