Chicken Cacciatore

I tried desperately to take my own picture of this but my camera batteries were dead.  I searched high and low for more batteries but apparently we are out… so you get a picture I swiped off the internet.  So this is basically what it looked like, except mine didn’t have mushrooms- but they would have been a good addition, if my husband would eat them.

I’d never had Chicken Cacciatore before.  Which, I think, is strange because it’s fairly common and I’ve heard of it forever and I’ve seen several recipes for it, I’ve just never eaten it.  So I don’t really have a standard for comparison- but we had my parents over for dinner last night, and they’ve had Chicken Cacciatore before and said this was the best they’ve had.  We all thought it was really really good- and it was super simple and didn’t have a million ingredients, proving that simple is better.

I basically used this recipe by Giada DeLaurentis, but I changed things up just a tad.  Because that’s how I roll.  Actually, it was sort of by accident but it worked out amazingly well (in the opinion of someone making this for the first time and who has never actually had this dish ever before in her life…), so I wrote down what I did and will be doing it again.


Chicken Cacciatore

1 whole, cut-up chicken (or 6-8 pieces of skin-on, bone-in chicken of your choice)
2 tea salt
1 tea freshly ground black pepper
1/2 C flour
3 Tbsp extra virgin olive oil
1 red bell pepper, chopped
1 medium onion, chopped
3 cloves of garlic, minced
1 3/4 C white wine (recipe called for dry, I had Chardonnay. It worked awesome and yeah, that’s a lot of wine… just roll with it, but make sure it’s a good wine because you can really taste it in the dish)
28 oz can diced tomatoes in their juice
3 Tbsp capers, drained and chopped
1 1/2 tea dried oregano

Season chicken with salt and pepper. Dredge in flour. Heat oil in large skillet over med-hi. Brown chicken (in two batches if necessary, don’t crowd) in hot oil, about 3-5 minutes per side. Set chicken aside. Add a little more oil to the pan and sautee bell pepper and onion til the onion becomes translucent. Add garlic and stir for a minute. Add wine and simmer until it’s reduced by half, about 7-10 minutes. Stir in tomatoes and their juice, capers, and oregano. Add chicken back in and turn so it’s covered in sauce. Bring to a simmer and partially cover. Cook, turning chicken over and stirring occasionally so it doesn’t stick, until chicken is cooked through- about 30 minutes. Remove chicken to a platter and boil sauce, stirring regularly, for about 10 minutes, or until sauce thickens a little. Pour over chicken and serve hot.

Lost in translation

I love my husband, he’s just so very different from me!  Maybe that’s what makes us work, we are complete opposites.  Let’s be honest here, if I was married to someone like me, I’d probably strangle them.  I am very… we’ll say enthusiastic (read: dramatic).  I’m often hyper and I pretty much never shut up.

Tim is calm and laid-back and quiet.

Where I over-express opinion and use words like fantastic and fabulous and amazing way, way too often- he is way more reserved.  I’ll make this fabulous (see?) gourmet meal that took 8452 hours of prep work and tastes like food-orgasm and he’ll be like “Yeah, it’s good,” and then I’m all, “GOOD?! That’s like one step above average!!” because I want him to be like “WOW THIS IS AMAZING!  I have reached my food pinnacle, eating will never be the same again!” But then if he actually said that, I’d probably be like “WTF… who the hell ARE you?”

So anyway, when I spent the entire day yesterday organizing the office, I pretty much thought that I deserved a standing ovation, or a metal of honor, or like… a cookie.  Tim walks into the office.  He grabs something off my (now-clean) desk and walks back out,  past me standing there looking all baffled and is like “what?”.

“‘WHAT?! DID YOU EVEN NOTICE THE OFFICE OMG?!”

“Oh. Yeah. It looks nice,” he says and continues walking.

I’m going to assume that in Tim-Speak, “it looks nice” actually means “Wow, you worked really hard, this looks great!  I don’t think anyone has ever organized an office as well, especially while taking care of two children.  Too bad you made dinner, I wanted to take you out!  You’re the best and prettiest wife ever!!!!”  Close enough.

Diet and exercise.

Yep.  The only surefire way to lose weight and to keep the weight off is to burn more calories a day than you eat.

Well, as my son’s favorite toy says, pull my string!  Who knew?  Crash diets *gasp* don’t work?

Of course we all knew this.  Basic stuff, we all learned it in health class, right?  Well, WHY are crash diets so popular?  I guess because everyone wants to take the easy way.  Studies have shown that crash dieting negatively affects your metabolism for the rest of your life. Yikes.

For the past few years, I’ve finally accepted the fact that diet and exercise are the only way to actually attain my fitness goals.  And let me clarify: when I say diet, I don’t mean I eat low-fat and fat-free versions of foods- those are generally full of chemicals anyway, yuck.  I don’t replace a meal with a sugary milkshake, that’s just silly.  I don’t cut out entire food groups.  I don’t count every calorie that goes into my mouth and I don’t deprive myself.

I eat normal, healthy foods.  I eat regular cream cheese and regular butter.  I put half & half and raw sugar in my coffee.  I eat full fat ice cream.  It’s all about balance and watching your portions.  Knowing things are off limits, I find, makes me want them more.  So nothing is off limits!  If I feel like having a bacon cheeseburger, I’m having a bacon cheeseburger- just not every day!

Food is meant to be enjoyed, and when we feel like we’re depriving ourselves, it’s not joyful.  “Diet” foods are known for tasting like cardboard.  I can’t handle that!  I love food too much to give up flavor.

And, you know what?  I’m never going to be a size zero… or even a six for that matter.  And I’m ok with that.  My body is healthy and fit, I am strong, and I am finally learning to be comfortable in my body- and it feels great.

Why we don’t eat soy

On my post about breastfeeding, a commenter said something about milk being worse for “soy babies”.

I’m sorry, commenter.  I’m not picking on you, I promise.  It’s just that soy is something I feel rather strongly about.

First and foremost, and the reason I don’t feed soy to my children: soy isoflavones can act like estrogen in the body and they can block estrogen from binding to estrogen receptors. (The study linked did animal testing. Sorry, but yes, I am for animal testing- better than human testing!)   It is thought that soy can thus cause early onset of puberty. This quote, in particular, is pretty scary: “Infants exclusively fed soy formula receive the estrogenic equivalent of at least five birth control pills per day.” WOW. (This is a good read on soy formula.)

Soy may be a cause of ADHD and autismSoy weakens the immune system. Soy formula may be a cause of type 1 diabetesSoy products negatively affect the thyroid. Soy can cause digestive upset. (I can totally attest to that one. I cannot tolerate soy and “digestive upset” is an understatement of what I experience when I eat soy…) Soy is one of the top eight allergens. (Which makes it even stranger that it is recommended as an option for an infant that can’t tolerate its mother’s milk!)   Just check out the many wonders of soy.

I’m not telling you what to do here.  I’m presenting research.  Look at it, do your own research, and decide for yourself.
