Can I just take a minute to tell you how much I love the crock pot some days? I had allergies horribly bad this morning and gave in and took half a Zyrtec. I usually don’t give in and today reminded me why. I felt like I was wading through a thick fog almost all of the day- PLUS I got an extreme headache on top of that (I’m not sure if it was due to the Zyrtec or maybe I was just dehydrated- or maybe my neck is out?). I spent a good portion of the day sitting on the couch in pain, guzzling water and downing Advil while my dinner just cooked away in the kitchen all by itself. You go, crock pot!
I adapted this recipe for Crockpot Chicken and Cornbread Dumplings and came up with something a little more like a pot pie. It was really, really good! I didn’t really measure much so bear with me on that part. This was so easy and quick to prepare and the results were really impressive!
1.5 lbs chicken breasts, cut into 2 inch cubes (I used five chicken breast tenderloins, the frozen packaged ones) 2 carrots, peeled and chopped 2 stalks of celery, chopped 1 small onion, chopped 2 cloves of garlic, minced a couple pinches of salt a couple grinds of fresh-ground black pepper a pinch of ground rosemary (you could also use the regular whole-leaf dried, just crush it between your hands first) a couple pinches of dried thyme 1 can of cream of chicken soup + 1 can of water 1 box/bag of cheap corn muffin mix (I used Jiffy)
Instructions:
- Throw the veggies and the chicken into the crock.
- Sprinkle the seasonings on.
- Dump the can of cream of chicken soup and then fill the can with water and dump that in too. Stir.
- Cook on HIGH for 4 hours.
- Prepare corn muffin mix according to package directions. Mine looked too runny so I added about 3 tablespoons of Bisquick. Also- I like sweet cornbread, so I squeezed in a good squirt of agave nectar. Honey would have worked very well too- but the agave nectar was right in the front. Yeah, I’m lazy like that.
- Spread the corn muffin mix on top of the boiling stew. If you wish to have it a bit… uh- soupier? runnier? you can just use half the mix. The entire mix pretty much ate up all the soupy part. Not that it came out dry by any means- it was perfect- just, if you want more of a stew only add half the cornbread.
- Cook an additional 40 minutes to an hour, or until the cornbread is cooked through.
- Enjoy!
The Keeg-monster has picked up some not-so-adorable-but-terribly-funny words. Yesterday we went though the grocery store with him poking me in the chest and then screaming “BOOBS!”. He also says either “boobs” or “bra” when he looks down my shirt. Typical male. Today he learned to say “booger.” He was screeching it in the car while we were sitting in the bank drive-through. I had to roll up my window; the man in the next bay over was laughing his ass off.
Hailey was scheduled to graduate from preschool on Friday, even despite the fact that she didn’t go the whole year. Um, and despite the fact that she’s going to preschool again next year. Today when I went to pick her up they told me they’re moving the graduation to tomorrow at 9:30. Splendid, as I have a hair appointment at 9:00. I had to book two weeks out to get this appointment, I am NOT changing it! Plus, Tim works tomorrow and he’s home on Friday. Bleh. Maybe other people will be pissed too and they’ll change it. I hope.
Lately, while Hailey’s been at school, I’ve been loading Keegan into the stroller and taking long walks. I really like it and he seems to love it as well, as he naps the whole time every time. Today, though, I had a half an allergy pill and then walked for an hour and fifteen minutes. I am TIRED. I’m not even sure if I’ve formed coherent sentences here.
This entry was really all over the place. I should stop now. Maybe I’ll make up for it with a recipe tonight if it comes out tasty.
I’ve decided recently to try and streamline our budget. It was getting a little out of control, especially on groceries. I found a blog called $5 Dinners. It’s a pretty good read and fairly good suggestions. I have made four recipes so far from the blog and found that they needed a little tweaking to meet out tastes. We are used to very flavorful, highly spiced, and rich foods and some of the recipes on that blog fall a little short and I just have to add additional seasonings. Just shows how we all have different tastes, doesn’t it! Some though- perfect as is. Like the Pad Thai. We had it last night and it was delicious. Very flavorful and rich and quick and easy.
So anyway, our grocery spending was getting up around $300 A WEEK. Sometimes more. Yes, seriously. For a family of two adults and two mini-people, that is astronomical! So we are cutting it in half, $150 a week. This includes all the stuff for Tim’s lunches, like lunch meat (why is lunch meat so expensive?!) and chips and granola bars (stuff that he can eat while working). So far, so good. We were successful on week one. We are cutting back our eating out to a max of twice a month.
It’s not like we’re really hurting for money or anything, but it would be nice to start saving up so that I can get my new (used) car soon! Also, one day, we’d like to buy a house and especially now, we will be needing $$$$$$ for that.
My best friend Jen’s mom does Medical Transcription and I am meeting with her next week to talk about getting into it. I am excited about that! A bit of additional income will help us meet our goals tremendously.
Well- sorry this has been boring money talk but it’s what was on my mind this morning. Now I shall go see what the Terror Twins are up to. I hear screaming.
 Just look at this boy. Have you ever seen a cuter little face? My baby is going to be twenty months old tomorrow. TWENTY MONTHS OLD. How?! There is no way it’s been twenty months since that child lived inside me.
 See? even with a dirty little face and no pants, he’s the cutest little guy in the world. (I might be biased but probably not that much.) He is starting to say words now and it’s adorable. He tries to repeat back pretty much anything you ask him to. He’s still teeny- 22.4 lbs as of yesterday, still in 12-18 month clothes. He’s still a cuddlebaby. His hair appears to be getting ever blonder while his skin gets darker from the sun.
 And he’s still a total goofball. And he still can make me melt with a smile and those big brown eyes.
